Paleo Football Food

Its Football Season: GO FSU!!

Football is here and the eating is bad so here are some recipes and ideas of how to health-ify your bbq.

Ranch Dip- Take 0% Greek Yogurt and add 1/2 to 3/4 packet of ranch seasoning
This has a ton of protein, a little high on salt but come on its a guilty pleasure dip anyhow just made lower in calories and not as bad for you.
Serve it with sliced peppers, cherry tomatoes, broccoli, carrots, and celery. To be fancy you can fill a pepper with the dip and put it in the center of veggies.


Hot Sauce Chicken- Hot wings and beer...yumm
Take chicken tenderloin strips and marinate them in hot sauce for at least an hour to over night, I use whatever is in my pantry. Put in the oven and bake at 400 for 15-20 mins or until cooked through. I like to dip this chicken into the ranch dip listed above.

Shrimp Cocktail- Easy and a crowd pleaser
Boil shrimp or buy it precooked and add your favorite dipping sauce. I like a spicy version of the regular cocktail sauces.

Deviled Eggs-
1.Place eggs in water and wait till water boils. Once water is boiling take off direct heat and let sit for 10 mins(still in hot water).
2.Take eggs and place in ice bath to cool down and crack on each side of the egg and roll (this helps the entire shell come off easier).
3.Cut eggs in half and scoop out yolk, add mayo, mustard, and sweet relish. Mix evenly and put back into the egg white cups. Top off with a dash of paprika for color.

If making 6 eggs:
4 tbl mayo
2-3 tsp of mustard
Relish to taste

4. Put mixture in a zip lock bag and cut off the corner so you can fill egg cups with ease.
5. Sprinkle a dash of paprika onto eggs


Spicy Meatballs- Grass-fed ground beef
1 pkg of grass fed ground beef (sub ground turkey if desired)
1 Small onion- diced
1 clove garlic
1/4 green pepper
2 tsp parsley
Dash red pepper flakes
Dash of Ground cumin
1 1/2 tsp Oregano
1Small egg
1/4 cup Almond Meal
  • Mix all ingredients together and scoop into small balls- oven temp at 400 degrees for 20-25 minutes
  • Serve in homemade sauce or plain


The good'ol Kabob
Take a skewer and throw on your favorite meat with a mixture of veggies
Add some seasonings and herbs and grill!

Skirt Steak w/ Chimmichurri Sauce
If you make the sauce ahead there is virtually no prep work to be done besides grilling the meat
•2 cups chopped parsley 
•2/3 cup extra-virgin olive oil
•6 tablespoons fresh lemon juice
•2 tablespoons minced garlic
•2 teaspoons crushed red pepper
•Salt and freshly ground pepper
•4 pounds skirt steak
1.Season Skirt Steak and Grill until desired- I like mine med So its about 5 mins on each side
2.Blend ingredients listed above and serve over skirt steak
 
Roasted Veggies (Grilled if possible)
Cut up various veggies
Toss in small amount of EVOO, Sea Salt, Ground Black Pepper, Dash of Red Pepper Flakes
Make sure the vegetables are cut in similar sizes so the cooking will be even
Grill or place in oven at 425 for about 15-20 mins- or until done
 

Need to Bring a Dessert?
  • Grill watermelon, peaches, pineapple and plums (my personal fav)
  • Make cocoa nib cookies or a fruit crisp using natural ingredients
  • Bring a fruit platter with mixed fruit

NorCal Margarita:
1.2–3 shots of 100% agave tequila.
2.Juice and pulp from one lime.
3.Shake it all up with some ice.
4.Add soda water to taste.
**I also add some fake stevia to it**

Sweet potato fries
Popcorn with a special seasoning
Mixed Nuts
